Shing Yan Leung

–

Winslow, Maine

Shing Yan Leung, or better known by his American name as “Tommy”, aged 82, suddenly passed away at his Winslow home Wednesday, September 30th, 2026. Tommy was born on September 8, 1944, in Canton, China and immigrated to Maine in 1975 thanks to his sponsors Evelyn and Rick Lam. Tommy married Elizabeth “Betty” Poissonnier Leung the following year and had begun work as a chef in various Chinese restaurants in the Lewiston, Bangor, and Waterville areas. In 1981, Tommy and Betty opened their own restaurant in Winslow which they proudly named Peking Hut which they operated for many years until they relocated to Biddeford. After over 25 years in the restaurant business, Tommy retired to become an at-home, full-time gardener and landscaper. Tommy loved tending his chickens, growing massive Chinese vegetables, and managing gorgeous flower beds. In his spare time, he’d be found attempting to entice wild ducks and geese into his pond while trying to keep count of the occasional deer that would wander in to snack on the spare cracked corn. Tommy loved being at home and cooking for his family when he could—he was settled and happy.

Tommy is predeceased by: his father, Zao Xin Liang and mother Mei Ying Zeng; mother-in-law Rita Poissonnier and father-in-law Arthur Poissonnier; nephew David Lin; brothers-in-law Darryl Stewart, Philip Poissonnier, and David Poissonnier.

Tommy leaves behind: his wife Elizabeth Leung; his daughter Su Ying Chavez, her spouse Michael and grandson Alexander; oldest son Wai-Man Leung, his spouse Lisa and grandchildren Bryce Leung, his spouse Maggie and great grandson Weston, Dylan Leung and his spouse Ariana and grandson James, and Tommy’s only granddaughter Jaelyn; Tommy’s youngest son Wai Houng Leung, his spouse Jillian and grandsons Wells and Archer.

Tommy also leaves behind his sister Moi Hing Leung and her spouse Xu Bu Lin along with his nephew Michael Lin and spouse Melissa and their children Jia-Xi and Liang-Kang, his niece Amy Ailey, her husband Dwayne, their children Quonn and Ameer, and his nephew David Lin’s children Jada and Liang-Zhi.

Tommy most certainly loved big parties, but a public celebration of life will be announced at a later date and time. The family wishes to thank Gallant Funeral Home for their care and asks that in lieu of flowers to please send donations in Tommy’s name to the Humane Society Waterville Area.
